‘The Paradoxical Waltz’ - Potatoes with White Radish
 ‘The Paradoxical Waltz’ is made of the two earthy vegetables, potatoes and white radishes. They both grow below the ground. Extract the best out of both of them.

A taste to remember! Don't even try to describe it. It invigorates the body and awakens the senses. Get ready to compose a poem in the midst of eating.

Preparation time: 20 minutes
Serves 4-6

2 tbsp. ghee
1 chilli (optional)
2 bay leaves
1/2 tsp. kalonji (onion seeds)
1/2 tsp. mustard seeds
4 potatoes (sliced)
1 white radish (sliced)
2 tbsp. coriander (chopped)
1 tsp. turmeric
Sea salt to taste
1/2 cup boiling water


1.      Heat ghee, add red chilli, bay leaves, and sizzle till brown
2.      Add kalonji and mustard seeds, and sizzle till they pop
3.      Add potatoes, radish, turmeric, and sea salt
4.      Stir and fry till golden brown
5.      Add 1/2 cup of water, cover and lower the heat
6.      Cook for 10 more minutes or till vegetables are ready
7.      Garnish with coriander leaves. Serve hot over rice.
